Windy Ridge is named after the apple orchard just down the road from our farm brewery, where they grow a variety of apples. This year we were able to co-ordinate our harvests to produce this beer-cider hybrid. This brew has 40% apple juice using a blend of Spartan, Empire, Macoun and Ida Red apples. We fermented it with Hornindal Kveik yeast, a strain developed by farmers in Norway that give the beer a tropical flavour and dry-hopped with Ontario Chinook for a pineapple finish.
