This round is a battle of mythical creatures and not unlike their origins, the hop varieties are also similar. The Gryphon has the head and wings of an eagle and body of a lion, whereas a Sphinx has the head of a human, wings of an eagle and body of a lion.

Although they never crossed paths in mythology, we are matching them up in this beer. Using Citra and Simcoe (yes, believe it or not, we have NEVER paired these two hops!). Both of these hops have a similar profile; big flavours of citrus and stone fruits so it’s compound layering on top of each other in this juicy brew. 1+1 = DELICIOUS!
